Jen’s Strawberry & Cream Holiday Pie

Pie crust (can be pre-made pastry crust or graham crust)

CocoWhip coconut milk frozen dessert topping by So Delicious Dairy Free

4 cups fresh strawberries, washed and hulled

3 to 4 oz Jen’s Zen chocolate sauce, warm

Prepare pie crust and set aside. Spoon slightly thawed container of CocoWhip into crust and freeze until firm.  Arrange strawberries point side up in cream.  Drizzle chocolate sauce over berries and chill until set.  6 to 8 servings.

Buckeye Balls

1 ½ cup creamy peanut butter

1/3 cup Earth Balance Vegan Buttery Spread, softened

1 tsp vanilla

3 cups confectioners sugar

2 tbsp Earth Balance or dairy free shortening

6 oz Jen’s Zen chocolate sauce

In a bowl mix place the peanut butter, Earth Balance and vanilla. Sift the confectioners sugar into the bowl.  With your hands mix all ingredients until a stiff dough is formed.  Line a baking sheet with wax paper and roll the peanut butter mixture into balls, using about 1 1/2 tsp worth of peanut butter dough for each ball. Place on the wax paper lined sheets and put into the refrigerator.

In a separate pan or microwavable bowl, melt together the Jen’s Zen chocolate sauce and shortening until smooth.

Remove the peanut butter balls from the refrigerator. With a toothpick pick up one ball at a time and dip it into the melted chocolate mixture. Return to the wax paper chocolate side down.  Place the sheets back in the refrigerator for 30 minutes or until firm.  Serve with toothpicks.

Banana Split Brownie Pizza

1 box fudge brownie mix (plus ingredients to prepare)

1 (8 oz) package dairy free cream cheese, softened

3 Tablespoons sugar

1 (8 oz) can crushed pineapple, drained well

2 bananas, sliced and tossed in 1 tsp. lemon juice to prevent discoloring

1 small jar maraschino cherries, drained on paper towels,  OR 1 cup fresh strawberries, sliced

½ cup finely chopped nuts

Jen’s Zen chocolate sauce, for drizzling

Prepare brownie mix according to directions on box and spoon onto a greased 15 inch pizza pan. Bake 20 minutes or until done.

Sprinkle with chopped nuts.  Refrigerate.  At serving time, drizzle with Jen’s Zen and cut in wedges.
